General experience in Umbrian restaurants: There are wonderful pasta dishes in many restaurants. Fresh ingredients cooked perfectly al dente. But it was often followed by a secondi meat course that was very ordinary. And there were often no vegetables on the plate or even on the menu or if there was it rarely had any flavour. No green beans, asparagus, artichokes although there there was often a green salad available.  Eggplant, zucchine, tomatoes available on request but often not well prepared.  Don't Italians eat vegetables in restaurants? Also never had that "out of this world" food experience in travels in the Spoleto region that is enjoyed elsewhere in Italy.
