“FRESH and at last not fried”

We are staying at the Thalassa hotel near by and being very disillusioned with the food their decided to investigate where other guests were eating out. A couple of guests recommended Fresh so we decided to give it a try.

We were put off by the building and wondered if we should go in - we did and we were not disappointed.

We were given a warm welcome by the staff, there was a beautiful restaurant inside and also some outside seating if you preferred. Wonderful choice on the menu for meat and non meat lovers. The chef kindly chatted through some dishes with us, and the waiter was extremely attentive throughout the evening - thank you.

My husband had a Greek salad, followed by rack of lamb, I had grilled squid with chilli followed by sea bass and wonderful vegetables - a great bottle of red was recommended which complemented the food beautifully.

The food was cooked beautifully, and tasted great, the presentation was attractive - clean and fresh. It seemed to have everything that every where ease we have eaten is missing - quality and a chef that can cook

The evening exceeded our expectation , we would most certainly go back.

“A hidden gem behind the Frog and Toad”

A quality restaurant with a lovely waiter called Sanjay who could not have been more pleasant and helpfull.The food was by far the best we have tasted in the Coral Bay Area. The ambience was relaxed and friendly,makes you want to go back.

“UN ESPERIENZA INDIMENTICABILE !!!”

Set your GPS navigator, use Google Maps or do anything else to ensure a never-to-be-forgotten culinary feast at Fresh Restaurant in Peyia, Cyprus.

Every dish was a delicate and intriguing masterpiece. My partner and I had a Seafood Salad and Salmon Carpaccio, respectively. Regrettably, I could not persuade the chef to share the carpaccio's vinaigrette sauce recipe with me. I pulled out all the stops, but the sublime vinaigrette sauce remains a closely guarded secret at Fresh.

We were torn between selecting meat or fish dishes and decided to try both. I savoured the Red Mullet Fillet Pasta topped with lobster bisque, orange and pecorino cheese - heavenly! My partner chose the Rack of Lamb with a parmesan crust, enhanced by crispy roast potatoes, mushrooms and vegetables grilled just right (not raw, not overcooked and certainly not dull and bland).

The beautiful garden terrace setting was made more so by the attentive and friendly service rendered to us by Sanjay. NB: Waiters of the world, please take a leaf out of Sanjay's book. He knew the wine list and recommended a Bardolino, an Italian red wine produced along the chain of morainic hills in the province of Verona to the east of Lake Garda. It obviously travelled well to Cyprus and was a superb accompaniment to our meal.

We highly recommend Fresh Restaurant as part of the Cyprus travel and restaurant experience.

Our sincere compliments to the chef, management and staff.

“Nice Food, Nice Atmosphere”

We decided to visit Fresh as it was recommended by some people staying in the apartment complex. We had never ventured down to this area to eat before, its a long walk down the Coral Bay strip, car or taxi probably best.

We were greeted on entering by the staff who werent pushy and let us see the menus before we decided to dine. We were shown to an outside table and a drink order taken quite quicky, but at no point were we rushed to order. The menu is very comprehensive and of reasonable prices.

After orders were taken, the food that arrived was extremely well presented. The quality was that of a very good restaurant and the prices were on the higher side but the quality of the food was such that it was nice to have a treat out

I would recommend this restaurant to an adult group or couples, but not really to families with children as I don't not think that the menu is reflective for youngsters

“Beautiful setting but not the fine dining standard we'd expected”

Having read and heard many positive reviews about Fresh, I was really looking forward to a fine dining experience. The setting and the friendly and courteous staff were excellent. Sadly the food was not to the same standard. Both my husband and I chose the same starter and main course. Our salmon carpaccio, whilst tasty, was not carpaccio at all which is supposed to be thinly sliced. The slices were half a centimetre thick and were more like sushi. Maybe that's the chef's interpretation, but I've eaten fish carpaccio many times and it's always been served wafer thin.

We asked for our duck to be served rare/pink and on arrival, the waiter did ask whether it was cooked properly - it was served sliced so he could see that it wasn't pink! Why couldn't the chef see that before serving it? Not wanting to make our friends wait as they had ordered fish, I said it was fine. While again very tasty, especially the cabbage accompaniment, the meat was tough and chewy in places as it had been overcooked.

So while presentation, ambience and staff get top marks, sadly I won't be rushing back as I really feel a good chef should be able to cook something as requested. Old Town in Polis do a wonderful fish carpaccio, so I know where I will go next time for a fine dining experience. Shame, as Paphos needs alternatives to the run of the mill restaurants everywhere else.

Dear Helen

We are truly saddened that you did not enjoy your fine dining experience and have confronted our chef for an explanation and he proposed the following:

1) Most restaurants freeze their fish in order to be able to slice it on a mechanical slicer whereas our Chef Alessandro prefers the traditional Italian way which is not to freeze it but rather slice it with a knife. The benefit of this method versus the "freeze and slice" method is that the delicate meat of the salmon is firstly not bruised and secondly is not burnt by freezing and from the heat generated by the fast turning blade of the slicer. Naturally the slices cannot be translucent. The freeze and slice method you speak of also lends itself to other issues which we know our customers would not appreciate. One of these is the custom of spreading 10 grams of fish over a 30cm plate. We assure you that we will not be rushing to sample the delicacy served up at Old Town any time soon. The fact that you always enjoyed a translucent carpaccio does not necessarily mean that you have been enjoying the dish in it's unadulterated form. For example we serve our Bolognese sauce with fettuccine while most people believe that spaghetti is the correct pasta. Now for several reasons fettuccine is the original pasta employed for this recipe and notwithstanding this reality, most people would object pretty much in the same manner you objected to the carpaccio. If you ever get a chance, and since you seem to enjoy fine dining, you should pay a visit to Harry's Bar in London where you will find the beef carpaccio also served as thick slithers. We are talking about a two Michelin star eatery here. You may be even more surprised to learn that the original beef carpaccio is actually topped with mayonnaise. Believe it or not. So please don't give anyone else a bad review.

2) Regarding the duck, our chef wishes to draw your attention to the actual shape of the duck breast which, seen in profile, has a prominent convex shape, much like a chicken breast. The perimeter of the breast is naturally thinner than the center middle and therefore understandably takes less time to cook. This will always result in uneven cooking and therefore for the sake of the middle not being undercooked, the extremities will be overcooked. A steak on the other hand has a regular shape and this allows for even cooking. On account of the fact that we have never received a complaint in this regard, we cannot but draw the inference that it is common knowledge amongst diners. The slices you mention in your review were seared after slicing in order to prevent the outflow of blood which combined with the creamy sauce would not have been spectacularly appetizing. The waiter and not the chef asked you whether you were satisfied on account of the fact that from the outside the slices appeared medium because they were sealed. Understandably the waiter waited for you to cut through one slice before making the outrageous enquiry.
