We had a very good meal - two courses of the a la carte menu plus half bottle of very nice wine and a bottle of expensive Italian water for 67€ for two service compris. Good value in an expensive area. Charming staff.

We first had dinner at La Fleur de Thym in June 2009, shortly after the restaurant had opened. We enjoyed our dinner there so much that we looked forward to returning, which we did – in June 2011. Our first dinner at La Fleur de Thym in 2011 was so delicious that we returned again during our five-day stay in Les Baux / Maussane. The owners are a young couple. The hostess, wife of the chef, extends warm hospitality to all guests. The restaurant is small, but lovely – with light stone walls, vaulted ceilings, ambient lighting, and well appointed. The prix fixe, three-course menu has two options, one at 20 Euros and another at 30 Euros – both a fine value. For starters we enjoyed the beef carpaccio (best we have ever tasted) and a truly succulent local melon with Parma ham. Two mains that stood out were the cochon (pig) and the beef, both perfectly cooked, tender, and very tasty. Our third course consisted of cheese, a generous assortment of four delicious cheeses. If you find yourself in or close to Maussane, try Fleur de Thym – we think you will enjoy it!

This little, unassuming restaurant made up for the very mundane food you can generally find all over France. Apart from regional dishes, a steask is the same in Normandy as the South of France. Here it is diffrent. Original, beautifully presented and served with pride and quite rightly so.

I have lived here in France for over 10 years and this was a delight. We happened to eat twice during our stay and ate the second time off the new summer menu. Everything was delicious, different and I take great offence in previous comments about the atmosphere - it was spotlessly clean, modern yet the character of the building remains.

If you're in the area please give it a try - I'm sure you will find it as refreshing as we did. Will be back again.

I adore eating in France because of the wide variety on offer, but there is nothing like a menu of perfectly prepared regional specialties with a creative twist. We were able to get a cozy table for two on a Saturday night without a reservation, though we ate quite late. Otherwise, a recommendation is recommended. The service was not the speediest, but not to the point where one felt ignored - quite the opposite! The owner herself takes pride in making sure all the guests feel at home and are well taken care of. There was only one other waitstaff, just as friendly, competent and professional. As in most of France, the financial choice between a la carte and menu is such that the menu is the better deal. Though not inexpensive, the prices are worth every penny. The regional specialties have a creative twist and are so beautifully presented, it's almost a shame to eat them. But once you've taken a bite, you realize it would be a greater shame not to eat them! Perfectly prepared meats, accompanied by ideal sides, and the dessert is not to be missed! The wine menu focuses on regional producers, offers a small but diverse selection, again at reasonable prices. If you eat outside, you are on the main street, though that's relative in such a small town. Indoors you are treated to stone walls and vaulted ceilings. This was a wonderful evening, the charm of the Provence in every respect!
