This restaurant is a little out of the way and a long walk up hills but it is so worth it once you get there...besides you will see a lot of lovely scenery a long the way. I was with a tour group and the menu was pre-determined. My family does not eat pork and the staff were so accommodating in making us dishes that we could eat. The meal was several courses and each course was delicious. Then one of the staff members went to the middle of the restaurant were they have an open fire pit for grilling and began grilling a steak. They prepared for us thin strips of steak on a mound of arugula with balsamic vinegar. I don't usually eat red meat either but this dish was mouthwatering delicious. I truly felt bad for everyone else that had pork loin because they were missing out. I never would have ordered this dish on my own but I am so glad that is what they chose to prepare for us, it was out of this world fantastic. If you visit this restaurant, which you should, describe this dish and have it prepared for you!! I apologize for not having a picture of it.

A hidden gem off the beaten path. My husband David and I are luxury travel planners with a true passion for extraordinary food and wine that offer the ultimate dining experience. Like the enchanting medieval town in which it is situated, this restaurant is one of the region’s best-kept secrets. Exuding rustic elegance and warmth, Il Molino is neither touristy nor pretentious; instead the focus is on producing nothing less than the fine art of Umbrian cooking. Some particular Umbrian gastronomic delights include top quality olive oil, black truffles, and Norcia salami. Chef Vania Buono crafts dishes that could stand alongside Italy’s most renowned culinary artistry. To best experience Vania’s cuisine, allow her the joy of serving you as though you were guests in her home. We highly recommend setting your menu aside and begin with a lovely regional wine and trust that whatever Vania prepares for you will delight the senses. Every piatto or small dish was so sensational that our colleague Jeff, experiencing her food for the first time, kept ordering seconds! It wasn’t until he had a few rounds of pasta with semi-aged goat cream, Amalfi lemons, and thyme as well as eggplant lasagna with tomato, basil cream, and Piccadilly ricotta sheep cheese, that we were able to progress to the other delectable courses to the finale of Tiramisu al limone sfusato di Amalfi (Amalfi lemon tiramisu). Mangia! Mangia!

Wow. A five-course meal in which every dish was exceptional. Standouts included the warm dark chocolate dessert and the pear and pecorino cheese flan with pomegranate jelly to start. Enhanced by the charming cavern-like space at intimate table for four laid with white linens. Outrageously delicious.

IL Molino deserves a higher ranking than it currently has amongst the competition in Spello. In good weather, the outside dining space can be appealing. But, the physical charm of IL Molino is best experienced indoors where one can marvel at the antiquity and simultaneously watch meats being grilled to perfection over glowing coals. On our recent visit, the offerings ranged from rabbit to veal and lamb. Pasta is available, too, but the selection of meat dishes is not found in most other restaurants and, if that is what you crave, this is the place to dine.

We returned after an absence of 36 years and it was every bit as good as we remembered. Wonderful room, great service and delicious regional food cooked with imagination and care.
