When we went for Pasta at Dok Mai Lao we were not disappointed. Corrado is a very nice and funny host. We enjoyed eating there so much, that we ended up going there every evening while in Pakse and talking to Corrado about Laos.
You should know that it is very simple but delicious Italian cuisine. For me it was the first pasta after 10 weeks (we used to eat local food all the time) and it was properly done. Also the atmosphere is very relaxed and Corrado and his team will even prepare dishes, that are not on the menu (ask for bruschette). Prices for food and drinks are fair and also affordable for people that are on a small budget.
The restaurant is easy to find. Its in the 24th road just south of the main street. You can see the yellow sign ("trattoria italiana") from the main street.
