We gladly confirm all the other reviewers' comments here. We also had a marvellous weekend in June 2012 and have no hesitation in recommending this new Chambre D'Hote to everyone. Nothing is too much trouble for Jonathan and Jill, the hard working and so gracious hosts who live on site and we also thoroughly enjoyed Jonathan's excellent cooking in the evenings (need to book dinner in advance) and a splendid breakfast. With such spacious guest facilities both inside and in the lovely gardens outside, the large swimming pool is a real bonus. The value, facilities and the hospitality are such that guests could use this as a base for exploring the area and not just as a stop-over. You will not be disappointed.

We were on a cycling holiday and booked without much knowledge of the accomadation. This turned out to be the best place we stayed on our 2 week tour. An absolute gem , we were so impressed we returned two nights later. We had the evening meal which was excellent and very good value. Great hosts

My family stayed in this wonderful B&B for three nights in the beginning of June, 2012. The rooms are large, the bathrooms have been beautifully remodeled, and we had access to a large living room and dining area. The Merretts could not have been more gracious hosts. The only regret is that our time at this B&B was too short. We would have loved to stay for a few more days to bike along the Canal du Midi, have another wonderful meal prepared by Jonathan, and enjoy the area. I highly recommend l'Olivier.

Just stayed at this recently opened Chambre D'Hote in Sallèles-d'Aude. The house has been redone very nicely, and the Merretts are wonderfully gracious hosts. Rooms are very large. There is a pool and great outdoor seating area, with a barbecue at your disposal if you wish. The breakfast room has a louge area, with TV,, numerous games, and computer.There is wifi throughout the house. Convenient to downtown Sallèles-d'Aude, restaurants within easy walk or drive. Owners will prepare a meal on request. We had a very nice lamb meal for Easter. Recommend very highly!

Room Tip: All the rooms were very large and more than adequate!
