We had a great weekend, walking the Dunes, biking, the weather great which helped, the beach bar at Schoorl at Sea is perfect, and Bergen on Sea is also a nice destination, if you want an active weekend at the Dutch coast we can recommend this place.

Merlet hotel and restaurant is a nice place to stay, we had a good time, but adding a Michelin Star and booking a Gastronomic weekend comes with expectations, the bill for a 2 person, 2 nights passed 4 numbers, so did the deliver?

What can be improved, making the place great instead of good?

- There are only 2 big towels in the room, have a shower after a long walk and in the morning you have to use a cold and slightly wet towel, for this price and level there should be enough towels in the room.

- The sauna, swimming pool area is old and worn out, we read some bad reviews online and they are correct, the sauna is not running like in other places where they switch it on in the afternoon, so you need to warm it 30 minutes before you want to use it, there are towels but no water for drinking, so we had to go up and get our own bottles. Unfortunate the drainage of the shower in the sauna area did not work so the whole pace got flooded. Merlet should not sell it selves based on these facilities and they will disappoint people with the quality, it does not match the rest of the service.

- The tv’s in the room are from 1985, lucky we did not bother for it, but if you do you will be turned off.

- We enjoy 2 nights in the Michelin start restaurant with great food, but where surprised the amuses where the same the second night, an exact repeat, when we booked the recommendation was to book this arrangement for 3 nights, would we get the same for 3 nights? At this level we would have expected more of a surprise, the staff words this it is the same as yesterday... surely Michelin would not approve.

Having said this all I would like to repeat we had a great weekend, we got what we came for, a nice re;ax in North Holland with plenty of fresh air and just hope this review will help Merlet to improve a few points that need attention and to help readers making their choice.

Brand new interior, same excellent chef and staff. In the immediate area surrounding Schoorl this is by far the most amazing place to eat. Of course it comes at a price but worth it. Delicate, and if you can, let the chef surprise you with the seasonal menu. Also the wine selection by the somellier, very nice. As you can tell; I recommend.

We spend two nights at Merlet at the end of 2018, enjoying two gastronomic dinners with matching wines at the restaurant and were completely happy with the experience. Arriving at the hotel we were made to feel very welcome and were upgraded to a roomy and very nicely appointed suite. The staff is without exception pleasantly informal and completely guest oriented, the hotel offers a very nice relaxing lounge and a bararea where is was a pleasure to stay for an after dinner drink and the environment of the hotel is a heaven for both walking and biking. Breakfast is relatively straightforward and merely adequate but both dinners were simply fantastic: creative, with high level ingredients, generally well presented and tasting great.The matching wines were a thing to behold: both sommeliers went out of their way to bring across their enthusiasm and succeeded flawlessly. Merlet delivered us one of the best culinary experiences we have enjoyed in the Netherlands and a fantastic stay. We could not recommend it warm enough. We understood the place would close down for refurbishing and improvements to the kitchen, but our experience, even without the renovation could not have been more pleasant.

We were eating in restaurant Merlet for the 3rd time and now it is really time for a review. We know for sure: if you need some pampering, go here! The food is delicious and beautiful presented. The staff is really nice, especially the sommelier made our night. So enthusiastic, good fun and serving tastefull wines with the food. The maitre d'hotel seemed a bit too busy to give everybody in the restaurant some attention. A pity, but compensated for by the rest of the staff.
What we loved was the service of some of the food by a kitchen member. It gives you a view and contact with a hardworking kitchen member that usually are not visible for most eaters. I will not talk about the bill, it is expensive but please enjoy the evening and go for it.
In a star restaurant you must feel like you are king and queen and that is how it feels at Merlet. We will return!

We had the most divine meal for a retirement celebration. Sitting in a private dining room which over looked the garden and had trees covered in fairy lights. A magical setting.
The food was a taste sensation and the service just perfect.
From the amuse bouche to the handmade chocolates with coffee , was plated, served comparable a work of art.
