I only booked our 'Friday lunch for two' about a week before we went to France but I would ring earlier to be safe, (February can't be a peak time so we must have been lucky). It was absolutely fantastic. The students (as someone below also said) are nervous in the sweetest way and are very willing to please. While the food is sensational, the value is phenomenal - we paid about £100 for two for haute cuisine amuse-bouches, starters, mains, puddings, wine, cheese and coffee. Guinea fowl was one of our mains; halibut the other. Puddings - one was an amazing Masterchef-style tarte au citron with vanilla ice-cream and the other a praline mousse choux bun affair. It felt luxurious and it's in a sort of chateau, in a very grand, high dining room, with lots of function rooms and wine cellars and kitchens nearby. We were the only tourists there - it was all French people enjoying a nice lunch out. This was very very memorable (and we are fussy) and our waitress even came out from doing from the kitchen to say farewell when she saw we were leaving. It's closed Wednesday evenings and weekends. We rang to book.
