“Excellent value, great food”
Reviewed August 19, 2011

This restaurant was recommended to us by our hotel, and especially since some of our party of 10 wanted to taste the famous cassoulet. For those that didn't, their steak and chicken were great as well, both in terms of taste as well as value-for-money. In fact, we returned a second time as we had enjoyed the first visit so much. Booking is recommended as it is a small restaurant and was full both times that we visited.

“Local Cassoulet”
Reviewed June 19, 2011

This small restaurant sits snugly in Castelnaudary, the epi-center of cassoulet.  For the unfamiliar, cassoulet is a peasant-style dish of duck confit, sausage, pork and white beans simmered in a deep earthenware dish called a cassole.

Au Petit Gazouillis does cassoulet extremely well.  The beans are creamy and flavorful (the next table of French gourmands explained that it is important to slightly mash and flatten the beans to bring out their full flavor), the pork and duck tasted diving having been simmered in the cassole for hours with the beans, and all were topped by a browned crust and served bubbling hot.

Reservations are recommended as this place is continuously packed at dinner time, no matter the time of year or day of the week -- it's that good.  Prices are reasonable as well.
