Franco was a perfect host. He showed us how the fantastic bruschetta was made on the open fire. The frittes were best in Italy so far. Luncheon was a delight even thou hit was late and kitchen was not in full operation.

One of this great, special memories.

Had dinner at la Fontanina in July this summer. We started off dinner with the exquisite selection of starters (antipasti) which won't ever disappoint as they offer a good balance of seafood and other local delicacies.

As a meat lover - they do really know their cuts - i opted for the outstanding "tagliata di manzo'", a popular BBQ dish in Puglia (especially south of Bari), which i'd strongly recommend "al sangue" (rare is best, medium cook is ok, but you would kill its. Juices and flavour if you get it well done!) and their zampina (round of typical sausage) is among the best you can eat in Castellana.

Oh..i forgot the most important thing of it all...WINE! It' be a tragedy if you did not get Stefano (who is also a qualified sommelier) to guide you through the intense flavours of the Apulian red wines and fruity whites.

If you are brave enough (and still have some space left in your stomach) then their selection of traditional desserts and eau de vie/liquors will just bring the perfect end to your meal.
