For the French, there is great romance and a sense of transmission, a connection with the past, in visiting a bergerie, or shepherd's house, where the sheep were tended, and their milk produced great cheese. Bergerie d'Acciola is a wonderful, family run restaurant roughly 8 km south of Sartene on the main road between Ajaccio and Bonafacio or Porto Vecchio on Corsica. Everything on the menu is home made, and you are likely to be served by the owners. It's a mountain and valley setting, with views of the sea in the distance. The brochettes, the cheeses and the desserts were all very, very good and the service is great too. Highly recommended.
