This restaurant was an astonishing surprise during our last stay in Tuscany.
We went there for a reunion with old friends, therefore we were six at the table (three couples) all rather exigent and very much used to Tuscan cuisine.
The location is definitely fascinating, being in the ancient canteens of the old monastery of Cavriglia, a lovely village in the Chianti area. The red bricks of the main dining room remind the original function of the place, that was used as granary in the medieval period. The old fashioned tables give a touch of further genuineness to the whole environment.
The food is nicely presented by the waiter, that gives plenty of details about each dish and its preparation during the ordering phase.
The dishes were all wonderful, both fish or meat based, but a special mention has to be given to the
“Paccheri al Baccalà”, surprisingly flavored and delicate at the same time.
The wine was astounding, although we choose one of the least expensive “Rosso di Montalcino”, served in a terracotta jug.
At the end of the dinner, having asked for a coffee, they proposed a gorgeous coffee menu with thirty (30) different selections of coffees from different parts of the world…
We will come back, for sure.

We had a great day cooking with Francesco at his restaurant Pappasileno!
It was really hands on! We cooked Gnocchi, Ravioli, Ragu, Pesto and Spaghetti Carbonara - from scratch! Basic Italian cooking in a very professional atmosphere.
It was really nice to work under a chef like Francesco, knowing that ingredients like herbs and vegetables are grown right on the doorstep.
He demonstrated good techniques in a very understandable and fun way!
Francesco and his assistant Marco are very sincere, they love what they do and they love sharing what they know.
The restaurant offers a very elegant setting located inside an old building that used to be a monastery. They offer a good selection of Italian wines (this is CHIANTI) and beers.
The food and the service are excellent!
I hope to return someday!
