The Cactus restaurant is indeed a reason to go to and to come back to Paros:

1. The food: Yannis is a master chef in Greek, Mexican and Thai cuisine
2. A place for meeting people: Vanessa and Yannis have an extraordinary ability to link up people with each other. A perfect place for networking and deep discussions about rock'n roll, the neolithic, football, the meaning of life or the influence of Derrick on German and Chinese culture
3. Vanessa mounting the lamps: in Paros, a summer day ends and the evening begins with a marvellous sun set that is followed by another extraordinary sight, namely, Vanessa mounting the lamps at the Cactus. An event not to be missed.

Great food. Ice cold beer. Lovely alfresco dining on Livadia Beach. Vanessa, the co-owner and hostess has a unique ability to make everyone feel welcome and special. I've been coming back again and again for 15 years! Cactus started as a Mexican place (well, the Greek/English interpretation thereof) and the food was always superb. Traditional Greek and wonderfully marinated grilled meats are also longstanding staples. Yianni has spent part of the last several winters studying at various cooking schools in Thailand. He comes back with a suitcase full of Thai spices, so now Cactus offers some great Southeast Asian dishes as well. Late in the evening Cactus recaptures some of the grace and charm of "old Greece." Young expats working in Paros for the summer stop to say 'hi'. "Regulars", tourists who visit year after year, linger to chat and joke with Vanessa and Yianni (if he's not busy cooking) and catch up on each others lives over beer or raki. A fortunate few happen upon the scene for the first time and join the quiet party-everyone is welcome. On luckier nights maybe Ruth or Eric (who work at Cactus in the busy months) pick up an accoustic guitar, and those who can sing, do. In even numbered years Yianni sets up a TV so everyone can watch the World Cup or European Football Championship matches. THE CACTUS ON A SUMER EVENING IN PAROS IS WHY PEOPLE WHO CAME TO GREECE ONCE, COME BACK AGAIN.
