I have had fish and chips all over the US, as well as the UK, Belgium, the Netherlands, and France. On average, the fish and chips in Vancouver, British Columbia, are better than anywhere else I've been to.
And the fish and chips served at the Wigan Pier in Squamish are the best I've had anywhere. Squamish is a little town situated just about halfway between Vancouver and Whistler. If heading in either direction, consider stopping here.
Ask for the halibut (not the cod), and for smaller pieces (not one big slab, which won't fry up right). You'll get a lightly-battered, crispy-on-the-outside, tender-on-the-inside fish with home-cut fries, at an astonishingly modest price (about $15 for the large platter). Personally, I prefer both with mayonnaise rather than ketchup or vinegar.
The Wigan Pier isn't very elegantly furnished ("mementos of England" decor, not offensive but not impressive), but the staff are friendly, and the overall food experience is tops.
