We had a great night at El Chapulim. We really enjoyed the personal attention of both waiter Carlos and chef Eric, who not only brought us our food and drinks but also explained what was in it and where it came from. The food was the best we had during a 3 week trip throughout the Yucatan. All ingredients are locally produced, and the chef uses this palette to create a pure work of food art. The dishes they serve are great in itself, but we also witnessed that the chef is very willing to improvise with regard to the (special) wishes of his costumers. So when you're in Holbox, make sure you go there.
