It's hard to separate the experience of wandering the market from the surrounding town, but Saturday (market day) is definitely the day to visit Pézenas. The combination of the market with the interesting history (and touch of Molière) makes for a fun and interesting visit. Although many guidebooks call this a "morning market", we arrived after 1 pm to find that only the meat and fish vendors are about to pack up. All other vendors were there through the afternoon. The fruit, ceramics, and textiles stalls provided a nice contrast to the old buildings in the center of town.
