They called it, "Ivory King"..... I've always known it as White King. That is the name of the tastiest King/Chinook Salmon I've ever tasted. The Stikine River has a higher percentage of white colored flesh on King Salmon than any other river, so while visiting Southeast look for it. White King isn't found much farther north and most folks from the "Lower 48" have not heard of it.
It doesn't get any better. Ludvig's cooked it to perfection. I don't like overcooked fish. Everything they serve is impeccable and of the finest quality and much attention is given to every detail. Gourmet quality in a hideaway local in beautiful, "Sitka by the Sea".
