When the kids want pizza and they dont want the same toppings as everyone else, this is the place to go. 3 types of sauce (you can combine the garlic/oil with others too). Intetesting toppings too. The stability of the toppings can be problematic if you choose large chunky ones, as there isn't tons of cheese to bind it all together like traditional pizza. I love the flavor of the crust, it reminds me of artisinal pizza

“Best Pizza I've found in town”

Most of the pizza choices in Thousand Oaks are chains and pretty predictable. Pieology is the exception. We had two of their pizzas for the first time when someone, who was eating gluten free, brought them to our house for a party contribution. We couldn't tell that the crust didn't have flour. We then went to the shop and tried two of the regular kind and really enjoyed them as well. The crusts are very thin and crisp and you put the pizza together in a conveyor line similar to a shop like Chipotle as each member of the crew asks you what you want and passes it along. It's ready about 5 minutes later. The ingredients looked very fresh. You can have your pie with red sauce or without and a variety of toppings and cheeses but it isn't overladen with the latter. they have set combinations too but you can tweak even these offerings, if you wish. BTW gluten free crust is an additional $2.00 charge. The only thing that would make them better is if they delivered.

“Quick and Fresh”

The restaurant itself is nothing special - very similar to a Chipotle inside. But the pizza is wonderful. You can customize everything just the way you want it, and because the crust is thin it cooks very quickly so you can order and then wait for it if you want take-out. We also tried a pre-made salad, which was good. Overall a great value.

“Incredible”

Forget about the fact that this place is a chain. The pizza is incredible. If you like thin crust pizza, you can't beat Pieology. I am a pizza lover and will take this place over any other pizza joint in the area. For those of you unfimiliar with the concept, it is an assembly line operation (similar to Chipotle). You select your sauce, cheese and toppings. It is one size and one price ($7.50) fits all. The pizzas are the right size for real hungry folks but a little big for most. I normally eat about six slices (they are small) and take two home. The pizza is great warmed up or cold if you so desire. The taste is simply amazing.

“Gluten Free Pizzas - made fresh from the oven....Yummy!!”

We have been wanting to explore this place from long so last weekend we tried it out. I prefer gluten free so opted the crust, herb butter sauce, mozzarella and few veggies. I was happy to see everything was done from scratch (except the gluten free crust was frozen). Wish there were more options on the veggies and it would have been nice to know if any of their cheese had animal rennet in them. All I could see was green bell pepper, olives, onions, tomatoes, jalapenos, cilantro and chunks of pineapple. Not sure if there was a free Wi-Fi though!!
