I agree that if you are not used to the buffet and weigh set up at Saveur it can seem a bit strange at first. For example, poached salmon with dill sauce was on the menu for the day, but it threw me off that none was out on the buffet. They got it for me happily when I asked. There are several restaurants in Santa Fe that have their own way if doing things and this is one. It does make for a bit pricey meal but the food is of high quality and the setting seems european or like a small NYC place. Dark wood paneling and lace. Very traditional what used to be called 'continental' cuisine. I agree that the owner can feel intrusive but really just assessing what you are interested in so relax and pick what you'd like. They are really very accomodating.
