Description: Casa Chimayo’s traditional approach to preparing authentic New Mexican cuisine, or “Comida de Nueva España,” as Don Timoteo, the patriarch of the restaurant, refers to it, comes from his commitment to using Grandma’s recipes and local ingredients. Guy Fieri featured Casa Chimayo in a segment titled “Aces Of Authenticity,” on his popular Food Network show “Diners, Drive-ins & Dives, showcasing their popular blue corn enchiladas! New Mexican cuisine has evolved from a blending of Spanish and Native American ingredients, resulting in a culinary experience like no other. Don Timoteo is proud to serve authentic New Mexican dishes using fresh, local ingredients such as: red and green chile, corn, beans, blue corn, posole, tortillas, tamales, atole, and more!

I arrived a little after 5pm on a friday afternoon when the place was still quiet. The pomengranate margarita was water down and marginal.

The quesidilla appetizer was on a thicker type of bread and not what I was expecting coming from the southwest.

The service started out OK until a party of 12 came in and hijacked the place. We didn't get any additiional service. I had asked for additional green chile sauce and water. It never arrived.

A bit of a drive, but the experience was wonderful. The Chimayo peppers are wonderful and a great added flavor to any meal. We bought a pound of sundered peppers that were ground up, and sprinkle it on eggs to pizza. The food at the Casa was fun...we tried 5 different dishes.

Off the beaten track, Casa Chimayo is not the place you go for high-end cuisine. But it is a place to go for down-home New Mexican food in a low-key setting. There is plenty of attractive outdoor seating, friendly waitstaff and tasty food made from family recipes. The prices are reasonable as well. (Check in on Yelp for a discount.) I especially recommend Casa Chimayo for families with kids. There is no kids menu per se, but there are plenty of kid-friendly options, like quesadillas and the staff is very welcoming. Their red and green chile sauces are spicy so be warned. If you are looking for a family-friendly place that's a good value, Casa Chimayo fits the bill.

A quick visit in Santa Fe and a fast internet search, brought us to lunch at Casa Chimayo. I grew up in Tucson, and learned what is Mexican food from the State of Sonora. Casa Chimayo is New Mexican food and how you know you are in the Northern portion of the State of New Mexico, is everything is served with locally grown green chile (that's "chile" with an "e" which means the flavorful vegetable, not "chili" with an "i" which is a whole other animal using some kind of spicy meat concoction.). You can eat Casa Chimayo's Abuelita's (little grandmother's) recipes with green or red chile, or Christmas (both). The decor makes you feel like you are sitting in Abuelita's dining room or patio (where well-behaved dogs are welcomed and given water in a bowl). The service is especially friendly, and maybe you'll be lucky enough to meet Tim, whose grandmother's recipes are made here and see his picture as a Nino on the menu cover. Beer on tap or local Dia de los Muertos bottled local beer. Now, answer the question for yourself....do you want a fancy fine dining service that you can get in any city? or did you travel to Santa Fe to sample the local, true heritage of northern New Mexico? Everything in the historic downtown Santa Fe is walking distance, so park your car upon arrival and don't bother moving it while you're visiting. We loved Casa Chimayo so much for lunch, we went back for dinner. Both meals were well prepared and very delicious.

Our tour group of 16 was treated to unique, delicious Santa Fe-syle breakfasts for six days. Chef Miguel and Manager James went out of their way to make our day start out scrumptiously!
