Description: Casa Chimayo’s traditional approach to preparing authentic New Mexican cuisine, or “Comida de Nueva España,” as Don Timoteo, the patriarch of the restaurant, refers to it, comes from his commitment to using Grandma’s recipes and local ingredients. Guy Fieri featured Casa Chimayo in a segment titled “Aces Of Authenticity,” on his popular Food Network show “Diners, Drive-ins & Dives, showcasing their popular blue corn enchiladas! New Mexican cuisine has evolved from a blending of Spanish and Native American ingredients, resulting in a culinary experience like no other. Don Timoteo is proud to serve authentic New Mexican dishes using fresh, local ingredients such as: red and green chile, corn, beans, blue corn, posole, tortillas, tamales, atole, and more!

We can't say enough good things about this place. The food is superb, staff very very friendly and helpful and atmosphere charming. We had guacamole (the best we ever had) and enchiladas. Portions are generous, prices amazingly reasonable and service ver professional. Could not ask for anything better!

Had lunch right on the old downtown square. OK food but all the downsides of a tourist center. Wanted a better place for dinner and found it. Good menu, great service, and very good value. This place has a bit of quirkiness about which we liked. I wanted something that a little different from the menu description and the waiter made it happen right away. Good happy hour beer, etc.

I really enjoyed my combination platter of a cheese enchilada, veggie tamale (where was the goat cheese though?), chicken taco. The chicken was nicely grilled, smokey. The chips and salsa were outstanding, the chips fresh cut, thick tortillas freshly fried.
I was disappointed in the rice and beans, which seemed to garner little attention from the cook. I realize this is not the central point of the experience.

Best Mexican your going to come across anywhere! Patio decor is well needing some attention, but the food and service it as good as your going to find. Portions are generous and prices are very reasonable. Go.. you will not be disappointed.

Don't let the outer appearance of this place sway you. The home style southwestern fare is tops and so are the agave margaritas. Roberto, the owner, made a real special night for my wife and I that we won't soon forget.
