We were invited to a birthday celebration at the chef's table which was inside the kitchen at Terra. It was a wonderful experience. Eight of us sat in the middle of a pristine kitchen. Chef Andrew Cooper, a very nice and calm man, was at the head of table and continued to run the kitchen as per normal. But the change up was that he brought all of us into the operation of the kitchen; shouting out orders and also participating in the preparation of the courses themselves. The food was outstanding. Chef Cooper has a wonderful sense of balance in his food preparation. Nothing overwhelms, but everything complements. He uses produce from the local Santa Fe farmers market, and menu composition is dependent on what is fresh. As an amateur cook myself, and one who appreciates the techniques of food preparation, the evening was a real treat as Chef Cooper was more than generous in sharing his recipes and techniques with me.
I would highly recommend this experience to anyone who appreciates good food. This was a memorable evening and we will certainly be going back for more
