Ed's was recommended to us by the bartender at another restaurant when I questioned the idea of Colorado-Mex food. We finally had the opportunity to check out his recommendation for lunch on our last full day in town.

The bad news, which was not unexpected, is chips and salsa are ala carte. Paying for chips and salsa is a reason to walk at a restaurant in Texas, but as the old saying goes, when in Estes Park, do as they do. The good news is the chips, salsa and guac were pretty good.

For our meal, we sampled tacos, fish, and bison. That is an order of fried fish and an order of bison. The fish was great, and the bison tasted like beef. Since most bison is hybrid, that was not unexpected, but the amount of seasoning masked any potential difference.

The service was top-notch, and the place is great looking. With a delightful bar, bar dining table, waiting area, and patio dining. Also, it is downtown, convenient to shopping, parking, and the river walk. It is well worth checking out, even for people from the southwest.

Started with chips and salsa which are not included with the meal! We also got the guacamole. It was so chunky the chips kept breaking! It was more like chunky avocado and purple onion salad than a dip! The chili rellino was a little odd. It was not dipped in egg and cornmeal to be fried but wrapped in an egg roll wrapper... interesting. The margaritas were average. My friend got the steak tacos. She thought the steak strips were well cooked and not tough.It was just an average meal nothing horribly memorable here!

Good (pricey) margaritas. Steak street tacos were so good, I definitely want to go again while in Estes Park. Drawback, they do not serve complimentary chips and salsa. But that's ok, I always eat too much of those anyway! Wait staff was friendly and efficient.

Food here is abundant and flavorful. We shared the nachos, which were meatless and some of the best I've had. The veggie burrito was huge and filled with a mix of quinoa, beans , summer squash and cheese. Had to take half burrito with me for another meal. Delicious! Restaurant was clean, fresh and open! Loved it!

Kind of a long wait for a Wednesday night but food was good. I think our waitress was new since she forgot an item, but was pleasant. For the money, it was worth it.
