Ed's was recommended to us by the bartender at another restaurant when I questioned the idea of Colorado-Mex food. We finally had the opportunity to check out his recommendation for lunch on our last full day in town.
The bad news, which was not unexpected, is chips and salsa are ala carte. Paying for chips and salsa is a reason to walk at a restaurant in Texas, but as the old saying goes, when in Estes Park, do as they do. The good news is the chips, salsa and guac were pretty good.
For our meal, we sampled tacos, fish, and bison. That is an order of fried fish and an order of bison. The fish was great, and the bison tasted like beef. Since most bison is hybrid, that was not unexpected, but the amount of seasoning masked any potential difference.
The service was top-notch, and the place is great looking. With a delightful bar, bar dining table, waiting area, and patio dining. Also, it is downtown, convenient to shopping, parking, and the river walk. It is well worth checking out, even for people from the southwest.
