After a day of training, we drove to the Red Iguana. There was a wait of 30 minutes but the menu and a glass of water kept us entertained. We started with Guacomole for four. It was fresh and flavorful. Three of us had the sirloin tips & chorizo tacos - three spicy corn tacos with lots of cilantro - very good. Our friend with the big appetite ordered a combo plate. Prior to our dinner he was sure he didn't like mole, however, mid-dinner he changed his mind. He took 1/2 of his dinner back to his room & ate it for breakfast. This is a Mexican restraunt we will return to next time we are in Salt Lake. Their Horchita was refreshing and they happily gave me a glass to go. Friendly, informative staff to help with the extensive menu. Mucho Gusto!
