After a month in Ecuador you start having cravings for food that is not that the typical fare. One can only eat shrimp and rice so many times. Finding The Beehive in Mindo was one of the best dining experiences in the country--because it was different. The only item on the menu, besides desserts (and you must try the carrot cake and homemade honey) is the Smörgåsbord. So delicious. A variety of salads, meatballs, bread, and other things make it up and it is delicious.
We ate here almost every day, once a day, for two weeks because it was so good. The owner, Ingo, is also a fantastic guy, hailing from Germany, and wonderful to talk with. I do hope he has created the "movie lending library" we discussed with him. And that he has found a good babysitter so he can go out on a date with his wife. ;)
I will return one day to The Beehive, and Smörgåsbord myself into food heaven again. I also am desperately in need of some good honey--if only international delivery was available.
