My family and I recently traveled to Mindo and found ourselves frequenting the Beehive much more than we intended! It is a wonderfully situated bar / restaurant towards the edge of the main street in Mindo. The owners are friendly and welcoming (as are their giant dogs) and the space is clean, open, and inviting.
More importantly (for us), the food is simple and delicious. They have family style tapas, where the amount of food you are served is based on the size of your group. The menu is small, but delicious--meatballs, falafel, sausages, coleslaw, German style potato salad, homemade bread and jams, hummus, cheese. My favorite was the picante jelly, which you can purchase and take home with you. It was a great option for our group, which was comprised of three New Yorkers (one of whom is a vegetarian) and four ex-pats residing in Guayaquil who were longing for better quality food. If you are looking for traditional Ecuadorian food, then this is not the place to go. But if you want a delicious, simple, and reasonably priced meal, then it's a must.
