We wanted someplace special to celebrate following our wedding in September.
I did a lot of research, and all roads led to Canlis. The location is high on a hill with 180 views of the surrounding water and city lights.
Canlis manages to be quietly elegant, refined, and very modern, yet still with a hint of rusticity. The service was exemplary.
Canlis' wine list was extensive. Though it included bottles for as much as $15,000, there was a wide selection of moderately priced offerings. Not being Bill Gates, I selected a superb bottle for $85. We all chose different offerings from the three-course menu (there are several menu options besides the three-course). The food, like the ambiance and the service, was superb. What surprised us most, however, was that when we finally left I looked at my watch - we had been there for just over four hours. We were not rushed at all, and we were so relaxed that the time slipped away. While that has happened in some European cities, I've never before had such a perfectly leisurely meal in the USA. Nice start to a new chapter in our lives!

Canlis provides as near to a perfect dining experience as possible. From the charming voice that calls to remind you of your upcoming reservation to the lovely hostess and her assistant who warm your coats by the fireplace before you leave to step into the chilly fog of a late Seattle night, Canlis hits all the right notes. My first time here was 40 years ago - it is as memorable now as it was then, if not even more. Canlis has changed over its long history and the result of each change has been for the better and, more importantly, the changes have been so subtle as to be imperceptible. The location, the views, the design of the space, the staff, the food, the amazing wine list, and the soul of this place all conspire to make Canlis a singular exceptional experience.

“Seattle's finest!”

Just a great experience eating at Canlis! Food is outstanding, service is equally so, and you should go on a Friday or Saturday and hear Walt Wagner an absolutely wonderful, world class pianist.

“A wonderful night - still a treasure”

I grew up in Seattle, and visiting Canlis was always a superb and special experience. That hasn't changed, and on my last trip back to Seattle we took special friends to have the same enjoyment we've always had. We were not disappointed, from the grandson of founder Peter Canlis greteing us, to the window table we requested, to attentive and non-intrusive service. The food, drinks and wine did not disappoint - in fact, we found a night at Canlis is still the stuff from which memories are created. Go for yourself and see.

“Didn't Disappoint”

We were in Seattle for a long weekend and after researching, decided this was going to be our "big" dinner of our trip. It started out with some small tastings of fried egg yolk, salmon mousse and mushroom. None of these really blew our socks off, but overall pretty good. Next we split the potato leek and black truffle soup. Holy Cow! Unbelievably delicious!! Perfectly seasoned....Maybe the best soup we've ever had. Next was the Canlis salad. Nothing too fancy, but huge salad and really good. We had the filet and halibut for our entrees. The filet was cooked to perfection and had amazing flavor with the purees. The halibut was also perfect. No fish taste at all, flaky...just amazing. The desserts capped it all off. A souffle and a peanut butter, chocolate, banana creation. Both great endings. Couple all the amazing food with the fantastic view and service (wish we remembered her name, she was outstanding), I will recommend to anyone interested.
