We take guests on a journey through the history and ingredients of Louisiana's unique food culture, and our demonstrations explore all of the influences in Creole and Cajun cooking, including French, Spanish, German, Italian, Native American, African, and Vietnamese cuisine. “This is NOT a hands on class”

This is very enjoyable and the people who run it are very nice, but this is not a hands on class.
It's a cooking demonstration where one or two of the audience is asked to come up a stir a pot.

Dear Len,

I am so sorry that you felt your class was not hands on enough and that only two people were able to stir a pot, I assure our guests that is not usual at Langlois.

Please know that is not the way we wish to do things and I am saddened that was your experience. Our goal is to get our guests to participate and get involved in the creation of the meal as much as they want. I ask that you please email us so that we can address your concerns directly.

To our future guests:

The way our class works, all of the prep is done for our guests (chopping and measuring) so that they may relax, sip their wine and prepare a meal. We invite guests to participate based on their interests in the menu but do not require participation. This allows for everyone to see the meal being created, to taste throughout the process and to interact with the chefs. Classes last 2-3 hours and include between 2-5 courses depending on the menu. In order to complete this in such a short time period and allow for guests to interact and dine together, some advanced preparation is required.

The participation our guests should expect include tasks such as sauteing, blending, mixing, whipping, roux making, frying, piping, roasting, baking, braising, pressure cooking, canning, and presentation. Our chefs review the recipes, history of the cuisine and the steps in the process of the meal creation. Guests are encouraged participate and to ask to participate if they want more. We want everyone to get involved.

Because our guests get to actively participate in the cooking process, we do consider our classes hands-on. In order to clarify for future guests, we will edit our website to reflect that guests do not get their own "individual cooking station" but do participate in a full cooking and dining experience. Our guests should never expect that only two attendees of a class get to participate.

“Hands on Cooking Class”
Reviewed June 15, 2013

Great experience. Knowledgable chefs. Amiable people. We were really able to work along side of the chefs. Those in our party who did not want to participate enjoyed the wine. The lunch was fantastic. We don't know if we can find such a great cooking experience anywhere else in NOLA. We definitely will return.

“Lots of fun and excellent experience.”

Learn and enjoy watching as great recipes are unfolded and then take a bite as they are prepared and served hot! This is the essence of this class!
We wanted to experience Cajun Cooking class as we both are into cooking ourselves. Langlois came as a pleasant surprise when we found this hidden gem literally a block away from the place we were staying.
Brynna was kind enough to invite us in as we were peeking through the windows. Looking at the set up and their kind hospitality we immediately signed up for the Class.
The class itself was a great fun experience. Chef Jodie was charming and informative. She helped us involve in the cooking while she charmed us away with her stories about Cajun cooking in her cutest southern accent.
The bread recipe was a hit. We made amazing crepes. I am not big into crepes but absolutely loved rolling the dough and cooking them. And Chef Jodie taught me how to flip them on the pan. and I did it flawlessly!!
We also made absolutely fantastic Cajun style shrimp.

Overall a great experience. It’s more about fun and a little work. If you want to watch then just watch. But if you are anything like me, there is no shortage of opportunities in giving a helping hand to the chef.

“Just what this parent needed!”

Sending a child off to college in a distant city is never easy so I wanted to have an experience with my daughter that both of us could enjoy. We definitely found it at Langlois. The experience of 2.5 hours met our timetable perfectly and we were involved in meal preparation nearly the entire time (other than eating the scrumptious food). There are limited events that a dad can spend with his 17 year old daughter that both can equally enjoy, but we both really enjoyed the expertise of the chefs and staff at Langlois. The best way for me to describe my highest recommendation of this experience is that I have the opportunity to return over my daughter's next four years of school in NOLA and I most definitely will.

“Cooking Creole”

My 19 year old granddaughter and I loved the 1 pm class. It was only a $7 cab ride from our French Quarter hotel, but could have taken the bus. We saw other cooking schools in the French Quarter and wondered if we should have chosen a closer one. BUT, arriving at Langlois's charming neighborhood establishment was soooooo much more authentic and away from the hustle and touristy chaos. Beautiful facility, well trained chefs, funny, friendly, super clean. We learned some local history, practical and delicious recipes that we will use at home, some food science, and basically felt like we were cooking in a friend's state of the art kitchen. All levels of cooks will learn!
