My second trip to Spruce Tree was less appealing than the first. I was excited to introduce a friend of mine to this coffee shop, since I had enjoyed it so well the first time. The overall, atmosphere of the shop, was less than maintained. The coffee tasted like it had been brewed in Alabama (you know, the kind of coffee you can see through...weak!) The barista on the other side of the counter was definitely friendly enough, but obviously knows nothing about making coffee or pouring a decent shot of espresso. It seemed to me as though, it may have been the owner's wife, who is eager to help, but knows little to nothing about what a decent cup of coffee should be. The man who was working the first time round was very knowledgeable about the roastery, the coffee, and definitely how to make a good coffee. It just goes to show, folks, that your coffee shop will build a reputation based on whether or not your barista knows the difference between an americano and cup of brew. Don't let your mom work behind the counter unless she knows her business.
