When you think of Silver City, out in the mountains of southwest New Mexico, fine dining is not the first thing that comes to mind, or the second or third, yet here is a very special place run by very special people. "Shevek & Co." is a wonderful little storefront place on the main drag downtown that seats just a few folks. The atmosphere is intimate and anything but cookie-cutter. The food is amazingly creative, with Chef Shevek combining local foodstuffs in the most clever, and tasty, ways. I experienced flavor combinations that were truly new to me (which is saying a lot), and everything worked. The menu is large, yet it is obvious that careful thought goes into every dish. And, thanks to the availability of every dish in three sizes, it is possibly to experience the chef's creativity more broadly. You might want to eat three or four or five of these wonderful dishes in the "tapas" size, which is still very generous, so that multiple flavor adventures will hit your mouth. I think this restaurant is a very special gem - a must place to eat if you visit the Gila Mountains.
