Considering what a small town Hereford is, and just about as far south in Arizona as you can get without crossing the border, this is an amazing jewel of a find. The owners have imported a pizza oven from Italy, and have done everything to make each dish and pizza as authentic to it's original counterpart in Europe. If you've had true Italian pizza in Italy, and have been searching for it - this is the place you've been looking for. The prizes are good, considering how large the portions are. Almost everyone we saw went home with boxes of leftovers (men included), because the portions are that generous. And the owners have done everything to include the local community, including Facebook opportunities to weigh in on the style of glasses and other touches throughout.

Second time here. Both times were excellent.ordered calamari, was very hesitant as so many places have a heavy batter. It was the best calamari I have had in the states. Lasagna was excellent and pizza very good and authentic. If you like true Italian pizza, you won't be disappointed. Tried the spimach salad and was not disappointed. Had a light fruit vingarette. We will definitely come back again and again. Service a little slow, so be prepared, but well worth the wait.

Pizzeria Mimosa's opening was long awaited in these parts. And the food does not disappoint. Terrific pizzas, some pasta dishes, great salads, very nice wine list and cocktail menu. Beers on tap are the rather forgettable Moretti and Peroni, but they're just making sure you have italian options; they also have Sierra Nevada and Blue Moon, but really they should have some local brews e.g. from the Old Bisbee Brewing Co. If the place is hopping, though, service can be extremely slow. Those pizzas cook fast (3 minutes tops?) but they can only do 3 at a time max, so you could be in for a long wait. The place is new enough as well that there can be disconnects between the hostess who seats you, and whoever your server is (as in, they may not notice you for awhile). Expecting that those kind of issues will sort out. Lovely patio with view of the mountains, which will be very nice in warmer weather (there are heaters out there too). Lovely paninis for lunch, too. All in all we will frequent this restaurant often as we are not far away, but would avoid Friday nights and weekends as just too busy and slow.

A family friend recommended the new Pizzeria Mimosa (www.pizzeriamimosa.com) in Hereford for dinner. Yummy! Authenic Italian at its best. We had a appetizer that was a fresh ball of buffalo mozzerella stuffed with cream, olive oil, and sea salt served with bread to spread it on. Heavenly! Our pizza was straight out of Naples, with the freshest, most authentic ingredients. We were blown away to find a place like this in the middle of the Arizona desert. I will go out of my way to get back there someday to eat again!
