The Four Seasons Restaurant is, first and foremost, elegant. The dining rooms are a landmark, designed by van der Rohe and Johnson, and are still modern after all these years.

I recently dined in the Pool Room, and it almost seemed like a set from a Kubrick movie - the rippling chainmail over the windows, the trees, the Barcelona chairs, the white marble pool.

But above all what struck me was the hushed tone. Diners were everywhere, enjoying their food and their company, yet in hushed tones, almost reverent. And the experience of just being in this wonderful room would be worth the price of admission, so to speak, even if the food were not superb. But the food is is superb.

Yes, there are a small number of less-than-deserving items on the menu, so you should save ordering the Caesar salad for your next trip to Morton's.

But my recent entree of filet of bison with foie gras was absolutely amazing and complex, and ranks up there with the best Michelin 3-star restaurant.

No, you won't find so-called avant-garde cuisine made with foams or essences, served in a glass and called an entree. This is real haute cuisine, with fresh ingredients, seasonally chosen, cooked classically, and in a most impressive setting.

Those who complain that the Four Seasons is old-fashioned or too expensive just don't get it. Luckily, there are some of us who still do.
