This place is a cheese lovers dream! This Seattle Cheese shop opened its NYC location around 2011 or 2012. Aside from their wide selection of imported cheeses, Beechers in house made cheeses are sublime. The No Woman (made with jerk spices) is phenomenal as are the Flagship, Fresh Curds and the Flagsheep (if you can get it). The Flagsheep is often sold out as it has now won a number of international cheese awards. If you can get it its worth every bite. The food at Beechers is also great although a little pricey. My recommendations are the Caprese sandwich made with beeches cheese (which is the best caprese I have ever had) . The Tomato Soup is also fantastic as are any soup made daily. The Beechers staff are friendly and will let you sample almost any of their soups, mac and cheese or cheeses just ask. One of the coolest parts of Beechers is watching the cheese being made which is made possible by large glass walls that allow patrons to look in on all aspects of the process from anywhere in the store. If you like cheese, good food and good atmosphere Beechers is the place to be.
