My friend and I decided to run into State Bird for a bite before the movies, only to find out that if we wanted a table we would have to wait quite awhile, but a space at the bar would probably be within 30 minutes. Yes, we said, and went to Social Studies for a drink, and sure enough they called us that our spot was ready.

At the counter we had a great server who explained what State Bird does, small plates, "in to fermentation", and small plates that augment the tray of food that comes around.

Oysters with sauerkraut, really delicious, garlic bread with briotta, mushrooms with eggplant and of course fried quail. Really good, really satisfying, really unique. Well worth all of it.

Don't expect the usual, expect the unexpected at State Bird Provisions.

Combine small plates, dim sum and a regular menu and you have a totally different dining experience. The food is excellent. I believe the chef is quite reknown in SF. His entire staff is competent, friendly and do an outstanding job. The dishes are so unusal in the good sense that its worth going back to see the constant changes. We know Glen one of his line chefs and he is a master. Don't misss this unique dining experience.

State Bird has a genius concept of small dishes being brought around dim sum style.
This allowed the chef to be creative and the diner to be adventurous, if you make a mistake, it is only a few bites. Also, you can be in and out within an hour.
We came on a week night right when it's open, and a small crowd was already gathering. Of all the small dishes, the State Bird (squab) is a must order. I did not like the roasted corn pancakes or the pair of oysters with some sort of vinaigrette, but like I mentioned earlier, it was only a few bites and not committal. Don't make the mistake of ordering too much too early, as more and more stuff keeps coming out!
Make sure you save room for dessert- the chocolate pudding was to die for and I saw other people having delicious looking options too.

Dim Sum meets Tapas in this super cool and tasty eatery. Try the beef cheek salad or uni pancake.
