There are hundreds of restaurants on Maui but most are expensive and not really distinctive from all the others. Cuatro has only been opened a few months but is already winning awards and local recognition for its "Pacific Rim" food fusion. It's small with only a few tables and tucked away in a small strip mall but excellent service. The menu selection is modest but prices are moderate for Maui. The Spicy Tuna Nachos was unique and outstanding as was the day's fresh fish selection that is offered served in four different styles. The Kihei Cooler dessert of fresh local fruit and coconut sorbet ice cream is a "must try". The wine list is good and a few brands of bottled beer are also available. It was just great with some truly delicious unique flavors.
