We had planned on going to a different restaurant that a friend had recommended in the same strip mall as Cuatro, but it wasn't open so we "took a chance" with Cuatro and were glad we did. We were so glad that we went back there a second time (we were only in Maui for eight days) and skipped the other restaurant altogether. Their fish specialties were the best - by far - that I've eaten anywhere. In fact, we went to another highly rated and three times more expensive fish specialty restaurant on Maui that paled by comparison to Cuatro. If Cuatro was located in a prime view location, it would be famous. It would also be much larger. Okay, down to specifics. Of greatest importance, the fish is fresh and cooked perfectly tender. We are very particular about this. They feature three types of fish and four creative presentations. You pick which fish and match it to which style you prefer. The service is top-notch. Our waiter explained the nuances of each fish and each presentation. He seemed to be very proud of the restaurant and said it was owned by a friend of his. As others have noted, it is BYOB with only a $7 corkage fee. I love that I can purchase wine at retail price instead of restaurant price. The savings go to one of their excellent salads or - better yet - their simple yet delectable ice cream with fruit and secret sauce dessert. We never order dessert at restaurants, but are really glad we did this time. One of the reasons we returned to Cuatro for a second time was because of the dessert. Don't expect elaborate; expect an elegant finish to cleanse the palate. Why is Maui so far away from Seattle? Darn.
