You go like almost to end of the road making a sharp right turn and there is this old house that looks nothing like a place to buy anything. Once you get inside, you meet Stanley and Dale. Stanley is a big 49er fan. He knows all the players from the 50's....like I do so we struck up a happy conversation. According to Stanley who does all the talking, Dale is the owner. We bought fresh made taro chips, sweet potato chips and bread fruit chips. They are all great. Try out the samples to decide. The hard part was how to pack them to take home without cracking the chips. We carefully placed the bags into empty cereal boxes and put them into our carry on bags which we placed under the seats. Came home with nary a crack.

Visiting this "factory" is like time travel. You step into an old house that contains a variety of stuff, most notably, two guys and a large wok filled with hot oil for frying slices of root vegetables into tasty chips. It's like something out of a movie. True local style, bursting with aloha spirit.

so the day we left Kaua'i, the husbanator insisted that we go pick up 4 more bags of the Okinawa sweet potato chips "because you can't stop talking about them." he then gallantly protected them as a carry-on bag so they made it back to mainland uncrushed. yeah, they are THAT good.
the taro chips are pretty awesome too, and yes, it's basically a house in Hanapepe with an uncle in slippers throwing batches of thin-sliced root veggies into a wok of oil. but it is crispy tasty MAGIC that comes out.
just go! and chat with the uncles if you have time, they're great.
