Description: Inspired by bakeries in France and beyond, Persephone Bakery Boulangerie and Cafe remains rooted in Wyoming, a local orientation expressed in our breakfast and lunch menus' focus on fresh, seasonal ingredients. The cafe carries a core collection of classic artisanal breads as well as a spectrum of sweets, from French croissants and kouing aman to cupcakes and tarts. To complement our creations, Persephone proudly carries Chicago-based artisanal roaster Intelligentsia Coffee. Housemade flavor syrups and European hot chocolate round out the barista bounty.

“Bizarre refusal to heat up food!”

The cafe is beautifully decorated and well located near the central square. The menu is lovely however the staff really let the whole venture down. I was initially perturbed when I witnessed the cashier bark at two older ladies in front of me in the line for asking what was in a certain dish. My husband and I ordered pain au chocolate and coffee. We were given cold pastries and when we asked for them to warmed up the cashier told us 'No', explaining that they had been delivered fresh at 6am from the bakery that morning (it was now 11am). We were slightly puzzled by the response and took the pastries to our table. When we cut into them the chocolate was rock hard in the center so we took them back again to ask them to warm the food up. Again we were refused this time with the excuse that they 'weren't equipped' to. You can't heat up food in a bakery? Really? All very odd.

Hello,

Thank you very much for visiting Persephone. I am sorry that my employees did not fully explain why we do not reheat our pastries. We go to great lengths to create handmade croissants and other vienosserie, delivering products with a light, flakey, and airy structure. It is our opinion that such products, while certainly possible to eat warm, are best enjoyed at room temperature when the delicate layers of butter and dough are suspended in the structure created during the lamination process. We make these every morning so they can be enjoyed as fresh baked product throughout each day. We do certainly have the capability of reheating a pastry, we have an oven, however said oven exists in a very small cafe kitchen that is taxed to keep pace producing the hot items on our breakfast and lunch menu.

Concerning the chocolate in our Pain au chocolate, we try and keep that traditional and use a moderate amount of the best chocolate batons we can source. They are incidentally not intended to remain in a fluid state too long after leaving the oven, nor is the flavor of the chocolate intended to be overwhelming to the pastry itself, rather compliment it lightly.

Ultimately we try to provide a great product in a volume significant enough to keep our clientele readily supplied throughout any given day, maintain well considered quality control, and serve with congenial demeanor. Please consider our constraints and our aspirations while accepting our apologies for not meeting your expectations.

Thank you,
Ali and Kevin

“BEST baked goods...ever! And a lovely patio.”
5 of 5 bubbles Reviewed September 4, 2013

I got baked goods every day possible during August! Cinnamon brioche are flaky and cinnamon-y, the berry crostata is berry wonderful-ness, and the orange almond olive oil cake is luscious ! The plum ginger ice tea and the coffee are both wonderful. The counter staff are so very friendly. And the sable cookies...delightful! Lovely patio seating - sunny and shady spots available. Delightful. Can't wait to return. They serve breakfast and lunch only; they stop serving lunch at 3pm. They are open a little later - maybe 4 or 5.

We stopped here for tea and a muffin on our way out of town. What a cute place! The tea was wonderful and the muffins were exceptional! We enjoyed sitting outside in the early morning, drinking and eating and enjoying the view.
