Description: Chef Driven: One thing we pride ourselves with is a great staff. We consider ourselves one big family. We have seen many of our employees start when they were 15 and grow up in the restaurant. We realize there is so much talent, passion and loyalty in our staff. Over the years, JR has learned new things, has had new ideas, and new styles that he has wanted to experiment with. Although, trying them on our customers at Chives Restaurant in Suamico was always ideal, it is difficult to change the menu when customers have grown to love certain signature items that we simply could not change. Bleu Restaurant and Lounge was an idea formed by JR Schoenfeld, and our son Nick Morse. The Chef: Bleu brings new talent to the area. Nick Morse is our Head Chef. Nick's passion for food blossomed several years ago. JR began taking Nick to work with him when Nick was 14 years old. He washed dishes, prepped food items, plated desserts and made pizzas. Since then, he has spent time as a Kitchen Manager, Line cook in Door County, Sous Chef at Chives Restaurant for 5 years and wanting to expand his knowledge of food, took a seasonal position for the summers of 2011 and 2012 at the Harbor View Hotel & Resort on Martha's Vineyard in Edgartown, Massachusetts. The Design: Wishing we could take credit for the beautiful interior design of Bleu, we owe Designs of the Interior on North Broadway in Green Bay all the credit. Old doors puzzled together on the ceiling were a challenge. JR spent all summer driving around the state of Wisconsin, sometimes knocking on doors of random farm houses asking to buy old doors. He loved being a "picker" in between designing the open concept kitchen and coordinating the construction.

“One of the best in the area!”

We have been to Bleu 4 different times, and each time we have had fantastic meals. The specials are fabulous. Wonderful fresh salads with unique ingredients. Last visit I had a tomato salad with Burrata! Do not see that very often in any restaurant. Fresh and nicely prepared seafood. You will not be disappointed. May a reservation! It can get noisy, so if that's bothersome - go a little earlier. Waitstaff is pleasant and helpful.

“gave it a shot”

went there for lunch. Not impressed High cost for average food. Do not order the sesame chicken it was not good. Flat bread is good. I guess my big problem is i was expecting something new different and good. What i recieved was a big bill for food that was not that tastefull and actually somewhat odd tasting. I take my wife out once or twice a month to different resaurants what i look for is good food , good service and good value. This place had poor food, average service and poor value.

“Fresh menu, diverse décor”

Bleu is a fine dining restaurant just south east of Green Bay. The restaurant has the same owner as Chives. The owner / chef was at Bleu the night we were there.

Their menu is split into three sections, labeled smaller, medium, and bigger. The dining room is wall free, meaning you can walk over to that part of the restaurant and see them preparing the meals.

The decore is rustic, with old wood doors mounted to the ceiling. Their s a wood deck with a few tables outdoor in addition to the indoor dining.

The food items are presented with visual care and flair. The taste exquisite. The prices are consistent with fine dining. The wait staff is welcoming and casual.

We enjoyed Bleu restaurant. I will still put Chives ahead of Bleu.

“So disappointing”

We had high expectations and left feeling like we had just had dinner at Applebee's for triple the price.
The bartender kicked off the night by degrading my fiancé and calling him "buddy" and then proceeded to talk the entire time when I think we made it quite obvious we wanted to enjoy our drinks alone.
We had a reservation and sat at the bar for 30 minutes anyway, with empty tables all around.
Food was mediocre. Very Applebee's. The ambiance and service didn't make up for it either. I'm done with Chives and Bleu. They had a good thing going at Chives and got greedy, in my opinion. Quality at Chives went way down the second they started planning Bleu.

“Fine dining, casual atmosphere”

We have eaten here a number of times and have never been disappointed. Nick, the chef, is the son of JR who owns Chives restaurant, one of the best in the area. He learned well as the food here is absolutely superb. The other night we ate at the bar and had small plates prepared by Nick. It was an awesome experience, a little pricey but worth every dollar. The waitstaff all do a great job. They are happy and attentive. While the noise level is somewhat high, it kind of fits the decor. Bleu is a fun place to dine and a welcome addition to Green Bay's dining scene.
