I had dinner here on a Saturday night with my mother and four sisters, during a trip to Stonewall Resort. We had a very special and memorable meal here. The staff went above and beyond before we even arrived, giving us directions (twice) and seating us at a large table in front if the fireplace on a cold night. We arrived at the end of the dinner rush so we missed out on the limited day specials, which sold out. That was the only disappointment.
Our waiter was patient and thorough and the food was simply divine. We enjoyed a bottle of wine- split five ways instead of four - and several appetizers. Wine selection was above expectations for a small establishment. Cheeses on cheese board were regional and excellent! my potato encrusted salmon was a very large portion and so good I couldn't resist eating it all, including the gratin served with it. My sisters all enjoyed their meals too including the stuffed chicken breast and several pasta dishes. (There were plenty of vegetarian options making that sister quite happy to have a choice finally). Dessert was equally as good, with all of us having a bite of the chocolate raspberry cake. Bill came to $196 with gratuity, making it an excellent value for the quality of food and service. I will absolutely be back, as I travel I-79 frequently and make many trips in all seasons to other nearby WV towns. I am so thrilled to have found this non-chain locally-owned restaurant and look forward to many more meals here.

My husband and I were in Weston for 1 night and were looking for a good place to eat. I researched and found this place was number 1 on Trip Advisor so we thought we would try it. You wouldn't know how good the food is just by looking at the outside of the restaurant. We had eaten a late lunch so we shared the filet. The waitress even brought the salad split into 2 bowls for us, great service to go with the delicious steak. We will definitely eat here again when we visit a Weston.

We ate at Thyme Bistro twice recently on a weekend outing at Stonewall Resort. Lunch ob a Saturday was outstanding from the hummus appetizer to the squash soup and specials. The spicy Cajun chicken wrap was very good with just enough heat. The hummus was served with an abundant serving of delicious pita. The squash soup with fried leeks was delicious. Service was attentive but not intrusive and our drinks were refilled often. Although only one server was working at lunch, we felt that he served us very well while also attending to three or four other tables at the same time. After viewing the menu at lunch and having thoroughly enjoyed our meal, we decided to return later that day for dinner.

We arrived for dinner after 8:00 PM and, after waiting a few minutes to be greeted, were shown to a table for two under a speaker that was playing recorded music. The music selection was fine but it was too loud at this table so we asked the server if we could be relocated to another table. The server's attitude was not very accommodating but he managed to find time to clear a nearby table and allowed us to move to it. His attitude throughout the entire evening appeared to us to be that he would prefer doing something different. The server at dinner was different from the server at lunch.

We had an excellent entrée of potato encrusted salmon that was perfectly prepared but the shitake-stuffed chicken breast was not very tasteful. The highlight of the meal was the cheese plate that included sliced salami, candied nuts, three excellent cheeses, olives, and flatbread. The wine selections were somewhat limited but prices were very reasonable and the wine service was acceptable. The total price for two without tip was $78.

After biking through Weston and seeing how the town appears to be down on its luck, we were apprehensive when relatives suggested joining them for dinner at the Thyme Bistro. We shouldn't have worried. The food and service are both wonderful.

We dined twice at the restaurant. We enjoyed a salmon special that featured fresh-off-the-vine tomatoes and basil; the potato encrusted salmon; the filet mignon with beer-cheese mashed potatoes; and a blue cheese burger. Each entree was delicious and memorable.

One downside was that the wine was not served at the proper temperature. Both of our glasses of red wine (a cab and a merlot) were served at room temperature, which was rather warm.

Desserts were wonderful, however, and we'd highly recommend Thyme Bistro for fresh food that's expertly prepared and is out of the ordinary.

While attending a conference at Stonewall Resort, my co-workers and I decided to try this restaurant in the town of Weston. We were very pleased with out selections. We all ordered an appetizer for our entree - the pizzas are fantastic, as were the desserts we ordered and shared. Our waitress failed to provide a bread basket to our table :(.
Also the menu, seems to very limited especially for someone who doesnt eat red meat or salmon. There is not a pasta dish on the menu which would have been a nice addition.
