I saw on the menu their claim to aim for the best cheesesteak west of the Schuykill River. Well, you have to know Philly to know that river. Turns out the owner is from an Irish family that ran taverns in Philly. Their cheesesteak is the real deal: thinly sliced prime rib cooked just right, sauteed mushrooms, onions and green peppers in a crisp roll. Went back the next night for pizza and ceasar salads. Love this place.

The underground space formerly occupied by Brickhouse Bistro (RIP) just re-opened as the Tin Brick Pizza. As you might guess, the owner is focusing on wood-fired pizzas, at least to start with. The place has been spruced up a bit; for example, the tacky-looking glass dessert case that looked perfect for a diner but odd in a dark-toned underground restaurant has been either removed or hidden. Overall, it looks lighter inside but still retains the "underground" ambience. Has the potential to be either a mancave-beer-hangout kind of place or a romantic full-service restaurant. Frankly, I hope it can accommodate both, because PT is such a tough place to have a year-round restaurant.

But back to the pizza...

And what pizza it is. With just one bite, this became one of my top 5 favorite pizzas of all time, and certainly my favorite in the area. Why? As usual for me, no one thing is adequate to make it a favorite pizza. Everything has to be in the right proportions, made from great ingredients, blended appropriately, AND not overly salty (let alone greasy or soggy). Tin Brick's hit the spot for my taste.

I tried the Pop Pie (spinach and roasted red peppers), with house-made Italian sausage added as an option. The bubbly-edged crust had just the right ratio of chewiness, its thinness was somehow still hefty enough to support the generous toppings, and that fresh sausage's mildness let its pork flavor really shine, highlighted by the spinach and peppers. I WILL eat this again on more visits!

Then again, the other varieties sure sounded delicious...we will definitely return here.

I do have one suggestion for the owner: Please add roasted garlic to the toppings list (if it wasn't already on there). There's nothing like the waft of fresh garlic to entice Italian-food seekers into a restaurant. I look forward to seeing this place succeed, and the pizza is off to a great start.
