Our visit to Fins Bistro has to rank near the top of the all-time worst restaurant experiences and left us in a state of shock.

The chef simply has low standards in selecting the fish he serves and doesn't know how to cook his fish. Worse than that though (as if that's possible when you go to a fish restaurant) is the lack of respect for patrons or any semblence of concern for customer satisfaction. The wait staff was very friendly, but the abuse we received from the chef (also the owner I believe) was shocking.

We went to Fins to celebrate a special occasion and instead had our evening ruined by what has to be the rudest chef/owner I've ever encountered.

I ordered the Copper River King Salmon. It came out and looked great, but when I cut into the fish I discovered that over 25% of the fish was that black nasty part you get from a low quality piece of fish. When the waitress asked how everything was, I told her I was very disappointed in the quality of the fish itself. She was very supportive and no questions asked offered to come up with a remedy. We discussed that I really had wanted this dish and if there was a better piece of fish that I'd prefer the same dish again. This all seemed fine until the chef (and owner) showed up, with a new raw piece of fish in hand, to argue with me about the Copper River fish and their higher fat content. He clearly didn't understand how to tell a good piece of fish from another in this case. He was rude, but I was hungry and no need to argue from my perspective since the second piece he had with him looked fine so even though he was a jerk about it I wrote it off as him not being good with customers and trying to make sure I'd be happy before bothering to cook it again.

A few minutes later the second dish arrived but sadly this time the problem was even worse. Clearly the chef rushed it and cooked the Salmon on too hot of a pan. This was obvious as each outer third of the fish was over-cooked while the inside third was raw. Not medium rare, not even rare, RAW, as in inedible and health-code violating undercooked fish. Further evidence of the high-heat approach was that while the first piece was a nice light golden brown on the outside, this piece was well charred.

I again was forced to raise this issue with the waitress and was somewhat at a loss at what to do now since this was twice now. Then the situation went from bad to worse. The chef stormed out again in a clear outrage and literally yelled at my wife and I in front of everyone in the restaurant about how they serve their salmon "medium rare" and it was "dijon crusted". I know medium rare and I know how to cook salmon and this wasn't it. It clearly suffered from being cooked on too high a heat. A clear sign of a chef who doesn't know how to cook salmon. The shocking thing was that he continued to stand there and yell at us for over five minutes. I couldn't even get in any sort of response though I don't know what you even say in that situation other than "please stop yelling". He then gave a final puff of "there's obviously no pleasing you" and stomped away.

My wife and I just sat there looking at each other in a state of near shock. We couldn't believe what had just happened and really didn't even know what to do next. A few minutes later the waitress showed up with our check.

Unbelievable. The food thing is the type of thing you can sometimes write off to a bad night or whatever, but the complete lack of respect for customers as was demonstrated by the chef/owner is unacceptable. I told the waitress how disappointed and shocked we were and how neither ourselves nor anyone else we knew would ever eat there again. I only hope this review can help dissuade you from making the same mistake we did.
