OMG! Hold onto your hats because Corsairs will put Jost Van Dyke on the gastro map of the Carribean. Vinny has done an amazing job of bringing fine dining to the laid back Carribean style of JVD. Their restaurant could go toe to toe with some of the best restaurants in the largest cities. The quality of the products they use comes through in every bite. Their food is not standard Carribean cuisine and is a welcome surprise in the islands. Everyone in our group couldn't believe the level of sophistication served up in the most casual atmosphere. The calamari ceviche was incredible - so much that I'm craving it as I write this review. The fish, risotto and scallops were superb. In terms of food destinations, you can't beat it. The service was top notch, I just can't say enough good things. If you are ever even remotely near JVD you absolutely must eat there.
