A passionate chef produces wholesome food in an idylic setting with the restaurant being an historic ranch home. Fresh home grown ingredients are used with an emphasis on natural food and natural flavors. A great experience with tasty vegetaran options

Great restaurant and various geese, duck and wild turkey products. All animals raised without force feeding. The magret de canard fume is excellent and so are the pates. Worth the detour.
Call in advance if you want to eat there!

Located on the beautiful Ile d'Orléans, neer Quebec city, this restaurant serves only what they grow or breed on their farm. The owners are dedicated to taking care of their ducks, gooses, guinea fowls and wild turkeys in a ecologically friendly way, which they learn from their native ancestors. Everything is cooked slowly and at low temperatures and no spices are used so you can enjoy the real taste of nature, and believe me, it is just wonderful !! I go there every year with my love ones to celebrate my birthday, and there is no place like this for such an event. The owner really makes you feel at home, and the food is just unique, tasteful and the prices are ridiculously low for the quality. Last but not least, you can bring your favorite wine to go along with this wonderful food.

The following excerpt is from a travel blog I wrote about our recent trip to the Quebec City area (http://mainelywinenews.blogspot.com/2011/11/short-excursion-to-quebec-city.html):
"Saturday evening we had reserved dinner at the Auberge au Gout d’Autrefois, a restaurant and farm that raises ducks, geese, guinea fowl and pheasants, as well as organic vegetables. The farm and restaurant are both run entirely by Jacques Legros – a former Green Party candidate in the Canadian federal elections – and his partner. The meals served at the restaurant are principally from the products raised at the farm, as well as from a few other producers on the island. The vegetables are all raised organically, the animals are raised humanely and in the open air and with no antibiotics or growth hormones used, and all work on the farm is done by hand with mechanical instruments. Our dinner, which consisted of a 12-course set menu, featured fare from all of the various animals raised on the farm, including smoked goose breast, smoked duck, rilletes of goose, duck, and wild turkey, and breasts of pheasant and guinea fowl. The restaurant doesn’t serve wine, but it supplies wine glasses and corkscrews, and we brought two wines we had purchased in Quebec City – a Rolet Cremant de Jura Brut and a 2009 Bourgueil from Yannick Amirault – plus the Vin de Glace from Ile de Bacchus. Dinner was an amazing experience, with Jacques explaining the preparation of each course and how he raises the animals, and it stretched out over almost 4 hours."

Run entirely by owner/chef Jacques Legros and his spouse, Au goût d'autrefois is one of those rare finds that you must take advantage of if you happen to pass nearby. Located on the island of Île d'Orléans, about twenty minutes from downtown Québec City, Au goût d'autrefois (A Taste of Yesteryear) is a country table at which is served the fresh and unadulterated products of the farm itself, with a little help from ingredients obtained elsewhere on the island. All dishes are poultry-based, with the birds being raised in a harmonious and chemical-free environment that ensures no additives of any kind ever reach the plate. Suitable for groups, the evening menus vary according to the number of courses, some of which include the farm's own foie gras obtained by means of a unique unforced feeding technique. For anyone concerned about organic farming and the conditions under which animals and poultry are raised, a visit to Au goût d'autrefois will prove inspiring, as well as very tasty! Reservations are required and the restaurant accepts largish groups as well as couples.

We are pleased that you have enjoyed our gastronomy of the region produced and prepared directly on our ecological farm. We are redoubling our efforts to provide our customers of food health of local gourmet flavoured cooked from the organic vegetables from our own gardens and the meat of our farms of geese, ducks, pheasants, turkeys wild and Guinea fowl.

Our ecological garden vegetables are produced naturally without any insecticide, pesticide, herbicide, or chemical fertilizers in respect of the environment and the health of our customers. Our herds are born and higher farm naturally also in respect of their well-being.

We are proud to offer our rustic table only foie gras produced on a farm without any forced feeding. We actually developed our ecological farm for more than 8 years our own environmentally non-forced feeding technique for the welfare of our geese and duck to also give the country table of our ancestral farm excellent ethical foie gras.

Our animals are born and high on the farm only from 5 natural grain that we choose to also give a unique flavour to our meat cooked on the farm at low temperature on periods of two days and without any added artificial flavour or spice.

Our native American inspired cuisine to discover the gastronomy of the terroir while you making discover food health prepared by us on the farm with love and with fine fat for our geese and ducks.

Yet once again please accept our thanks for taking the time to send your comments and appraisals.

Yours,
