First of all, unless, for all these years, you've enjoyed dining in a closet, accept the fact that if there is a crowd (which is most any time except for the first 15 minutes they're open), it's going to be tight.
Second, you can see that there are three people in the kitchen. You walk right by it when you walk in. Hence, food isn't going to appear a la Mickey D's. Plus, if you stand and watch them preparing the food (which I highly recommend. Watching people love your food into existence...), you'll understand that this is not a slam, bam, thank you ma'am type of joint.
Third, while their big plates are amazing, start out with many little plates. Sooo amazing. The pickle plate is great.
Fourth, especially in VT, people may not be used to paying $$ - $$$ for food. It's worth it. Seriously worth it.
Fifth, the have the Mexican Coca Cola.
If I'm looking to impress foodies with what can happen in VT, this is the place to take them.
Oh, no reservations. Makes for an interesting night out.
