Only ate there, did not stay at the hotel. This was our second visit to this restaurant and the food is quite good. The reason for the "average" review is the service. It is apparent that the restaurant, which at one time was a training venue for the culinary school, is not doing much in the way of training. None of the mistakes were fatal but when you add them all up they made for a less than memorable experience. Toward the end of the meal we asked the server if bread came with the meals. Her response was, "oh, it must have been in the oven". When she spilled some food on the dessert menu she wiped it off with her hand! An interminable wait for the check and and excessive wait for the return of the charge receipt were "consistent" endings to this less than enjoyable experience.

Yes, once again, staff that goes out of their way to serve you. The wings, hot or sticky sweet - are really a star pub fare here. The calamari are awesome, and bbq pork Nachos... well we ate like college kids! I particularly enjoyed the veggie sliders and the service. Not particularly nuts about the wine list, but they can shake a good martini, and nurture your need for being cared for. and PLEASE, have the maple creme brulee!!!

Our new Restaurant Manager is hard at work re-energizing our wine list as well as making some fun additions and changes to our mixed drink menu. I was staying at the hotel and decided to try it.
Walked in to the restaurant and no one was there to greet us. Waited 5 minutes with no one. So we decided to walk in and take a seat.
After 10 minutes of staff walking by we stopped this girl to ask for service. She had told us we should have waited at the front. There was no apology for our wait.

We finally got a server and placed our order. The food was ok but not what I would have expected from a place that advertises a culinary experience.
Service in the tavern did not match the rest of the hotel. It must be different management.

The Tavern is part of the Resort and management team the accountability for this is not on the shoulders of a third party and I assure you this is being taken seriously. Appropriate measures will be taken to ensure this information is used as a learning and training opportunity. This experience is not typical or acceptable and as "Vermont's Culinary Resort & Spa" we can and must do better than what we presented to you.

Our Director of Culinary Operations, Chef Shawn Calley, is passionate about sourcing local, fresh, high quality ingredients as well as growing many ingredients on property. Was staying at the Resort for just one night, so we thought we'd try the restaurant there for dinner.

So-so: Getting seated was a process, there was one person who was seating customers, busing tables and helping serving, so we waited quite a while before someone even came out to seat us (you can't see the waiting area from the dining room.

Bad: The worst part of the experience was how loud the dining room was. Incredibly loud and obnoxious for a supposedly upscale resort. The bar itself is huge, and dominates the dining room. This puts most of the tables just a few feet away from the customers either sitting at the bar or standing around it. When we mentioned it to our waiter, he said there was a banquet starting soon, and that the bar would quiet down soon. Well, it never did. Even the waiter had to put his ear right down next to people so he could hear them.

Good: Our waiter (Justin) was excellent.

So-So: I started with a winter greens salad with a Cherry Balsamic Vinaigrette dressing. The salad was huge, the greens were fresh, but there was so little dressing the salad was very dry by the last 1/3, but I'd had enough greens by then anyways.

Excellent: I had the Beef Bolognese (special.) It was fantastic.

So-So: My wife had the Fish and Chips. The chips were supposed to be "extra thick cut ripple potatoes," but in actuality they were pretty thin and overcooked. The beer battered fish was excellent, she thought. The presentation was such that under the fish and chips and slaw was what looked like a piece of newsprint looking parchment type paper. The problem was that it was very thin and paper like, and by the time she got down to the portion of the meal actually sitting on the paper, the paper was soaked and tearing into little bits, forcing her to pick shreds of paper out of her meal. Really?

All in all, it was very disappointing. The dining room design was absurd. I really can't remember the last time I was in a place for dinner that wasn't a true pub that was so loud. A little interior design/noise abatement work is sorely needed.

Information such as this is a great way to reward and thank associates for a job well done and also as a training opportunity and I have shared your observations with the culinary team. It certainly is our intention that each guest has the experience they are hoping for. The Tavern is intended to be the venue where a laugh can be shared, a sporting event can be cheered on...all while having a great time with friends, relatives and other guests. It is unfortunate that this did not fit your expectations. However, we do have an alternative. Our signature restaurant is currently under re-construction and is anticipated to be revealed early June 2014.
