“Terrific taste experience”

Very happy with my first visit here. Every course was full of fun and interesting favors and the service was excellent. The proteins were rare as I like them with nicely balanced sauces. My only negative is that the chef had a heavy hand with the salt. Nearly ruined a few dishes with too much sodium.

Ceasing Pistou is one of the best choices for an outstanding dinner or lunch in Burlington.

“Two Nights, Two Couples, Two Fabulous Meals”

Had the pleasure of enjoying two very unusual and delightful meals at Pistou's on our visit to Burlington. First meal - a romantic dinner for two made up of various appetizers, a nice red wine for the lady, and some Trapp Family Dunkel for the man. One week later, dinner with friends, all of us opting for a chef's taster sampling, with a special request for vegetarian/pescatarian offerings only and, of course, again, great wine to accompany. Both evenings were marvelous. The chef's tasting selection was perfect - not too much, but left us all satisfied. Heirloom tomatoes with balsamic, fresh basil, and goat cheese opening. Roasted peppers with miso drizzle and some secret sauce as a starting course - out of this world. Risotto with sea scallops and truffle oil and fennel as a next course - fabulous! A chocolate souffle-type dessert. Love this restaurant and definitely recommendable for a stop in Burlington. NOTE: best to make reservations a day in advance - they book up fast and it's not a big place.

“Exciting Chefs menu”

We had a fabulous dinner. We chose the "chefs menu" which means that the chef chooses
the courses for you. We also asked him to pair each course with a wine. Everything was delicious.
Our favorite was the very tender lamb and the lobster and chorizo risotto. Can't wait to go again and see what he coolest next rime

“A very creative chef with very small portions”

An unusual creative menu with very delicious entrees. We had the 4 course tasting menu which had unusual items and unusual flavors. We enjoyed all 4 courses, had a great time but left hungery and we are not real big eaters.

“ill-informed, arrogant staff”

Our waiter couldn't answer basic questions about ingredients in the entrees, so he chose to guess about them. Finally we had to figuratively twist his arm to get him to ask the chef.

The host(ess) was arrogant. The general feeling in the restaurant was that we were lucky to be allowed to dine there.

With quite a few other enjoyable, high-end dining places in Burlington (with far friendlier and more competent service) we won't be returning to Pistou. Ever.
