My wife and had the opportunity to visit the Zion Ponderosa Ranch Resort on the eastern border of Zion National Park. While there we were favored to eat at the resorts new restaurant, the Blue Belly Grill. It is an outdoor restaurant and the setting for dinner was quite magical. We sampled an appetizer and a salad and we both loved our entree. We couldn't resist desert and both agreed that the entire experience was the dining highlight in this region of southern Utah. I suggest the crab-cakes and the salmon filet. A warning, I am told that this restaurant is only normally open from mid-may to mid-september, although they do have a buffet and other food services the rest of the year.
