Farmington, Utah is one of the most unlikely places to find a great Mexican restaurant, but Francisco's is one of Utah's best in my book. We discovered it when we were in the area and decided to be adventurous and stop in. We were hooked immediately.
The seating area is small and is usually packed by regulars who have come to love this place. The menu is a Baja cuisine with several great seafood offerings. However, the chile verde dishes are what Francisco's has become famous for.
My family particularly likes the breaded shrimp appetizers, chile verde enchiladas, and shrimp tacos. However, one can hardly go wrong with any of the menu offerings.
The portions are large and the service is quick and courteous. Arrive early if you don't want to wait. However, the wait is well worth it. It's not unusual to find people who have driven long distances to come to Franciso's for dinner.
