Our children loved digging for trilobytes at U-Dig Fossils in Delta, UT. We came home with a fairly large number of trilobytes, which the kids proudly showed off to their friends. Many pieces ended up being as good as some on display at the Smithsonian Natural History Museum in DC (this quarry is where many of those came from!).
Be aware that it can be cold up at the dig site even in the middle of the summer, and even though it is cold, you can still sunburn! We wore shorts because it was hot in the valley. At the end of the day, our legs were cold and sunburned at the same time. I'd recommend wearing long pants (you spend a lot of time sitting on the ground surrounded by sharp rocks), and don't forget the sunscreen!
